Mickeys Shamrock Shorts Cookies

When it comes to Mickey’s wardrobe, red is the color of choice any day of the week — save one! Come Saint Patrick’s Day, even the Mouse will be wearing green. Decorated with white chocolate shamrock buttons, these festive cookies are a perfect fit for a holiday party or classroom treat.

You’ll need:

  • Template for Mickey’s Shamrock Shorts Cookies
  • Scissors
  • Batch of sugar cookie dough (homemade or store bought)*
  • Rolling pin
  • Flour
  • Wax paper
  • Kitchen knife
  • Baking sheets
  • Cooling rack
  • Green cookie icing (the kind that hardens when it sets up)
  • White chocolate chips
  • Small microwavable mixing bowl

* Note: If the store-bought brand of dough you use is too soft to hold the cookie shapes while baking, you can knead in a little extra flour to stiffen it before rolling it out.

Recently my oldest was tasked with a cooking project for a class at school.  When trying to come up with recipes together we decided if we had to take a break from Disney planning it might as well be with Disney snacking!  We wanted to recreate the Magic Cookie Bars from Roaring Forks at Disney’s Wilderness Lodge Resort.   Now you can too!

Big Thunder Ranch Barbecue Cole Slaw Details and Recipe

“This is not your normal cole slaw,” says Chef Sean Layne, the area chef for Big Thunder Ranch Barbecue in Frontierland in Disneyland park. He serves a whopping 1,000 pounds of the crunchy, sweet ‘n spicy slaw every week at Big Thunder Ranch Barbecue, along with barbecued chicken, ribs, sausage, cornbread, ranch beans and delicious desserts.

Since guests are constantly asking for the recipe, we thought we’d share it with you – just in time for your own Fourth of July barbecue. It’s great to pack for a picnic since the base is vinegar (no mayo) and also gluten, dairy and egg free. And if you don’t want to shred the cabbage, just pick up the ready-made version in the produce section of most grocery stores – two 1-pound bags are just enough.

Big Thunder Ranch Barbecue Cole Slaw Details and Recipe

Big Thunder Ranch Barbecue Cole Slaw

Serves 6 to 8

1/2 cup white-wine vinegar
1/2 cup sugar
3/4 teaspoon coarse salt
1/2 teaspoon celery seed
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
1/4 cup olive oil
1 pound shredded green cabbage (about 1/2 large cabbage)
1 pound shredded purple cabbage (about 1/2 large cabbage)
2 carrots, shredded

  1. Combine vinegar, sugar, salt, celery seed, paprika, black pepper, and cayenne in a blender; blend on low speed until sugar is dissolved.
  2. With blender running, slowly pour oil through top of lid, processing until dressing is combined. Set aside.
  3. Combine shredded cabbage and shredded carrots in a separate large bowl. Add dressing, tossing to combine. Refrigerate for 2 hours, tossing occasionally, before serving.

California Grill at Disneys Contemporary Resort   Golden Gate Cocktail

This drink was created especially for the 15th anniversary of California Grill at Walt Disney World Resort. The award-winning restaurant at the top of Disney’s Contemporary Resort opened to rave reviews on May 15, 1995.

1 1/4 ounces Remy Martin VSOP Cognac
3/4 ounce Amaretto Disaronno
1/2 ounce cranberry juice
Orange slice, for garnishShake ingredients with ice and strain into a martini glass.
Squeeze the slice or orange into the drink.
