Appropriately taking place at the home of extraordinary culinary talent, the Walt Disney World Swan and Dolphin is proud to showcase our passion for food and beverage by inviting you to partake in the first Annual Swan and Dolphin Food & Wine Classic October 8 and 9, 2010. Conveniently taking place during the Epcot International Food & Wine Festival (Oct. 1 – Nov. 14) and located just a short walk from Epcot®, the event offers foodies the ideal opportunity to continue their culinary experience after enjoying the festivities at Epcot®.

Save the date and prepare your palate for a taste of diversity and culinary brilliance. Begin by delving into one of the six seminars offered by our very own food and beverage experts. Elevate your knowledge from wine appreciation to wine wisdom with a Bordeaux Blending seminar, or take part in a Sake Hour to learn about this enticing Japanese beverage. Other seminars available for your picking pleasure include Mixology, Beer, Bubbles, and Riesling.

Reservations and Tickets

Tickets to the Walt Disney World Swan and Dolphin Food & Wine Classic are available as part of a hotel package or individually. Seating for the seminars is limited and reservations are suggested.

* One and two night packages are available starting at $169* per night and include a beverage seminar for two plus unlimited food and beverage samplings at the Food & Wine Classic (food and beverage stations will be different each evening)
* Advance purchase event-only tickets are available for $50 and include one seminar and unlimited food and beverage samples on the causeway
* Food and wine samplings also can be purchased a la carte on the day of event. Tickets are $2 each or 25 tickets for $45; or you may purchase a bracelet for $50 which allows you unlimited food and beverage samples
* Entertainment will include Pieces of a Dream, The Latin Jazz All Stars and The Groovemasters

Walt Disney World Presents 15th Annual Epcot International Food & Wine Festival

The Epcot International Food & Wine Festival opens Oct. 1 with the theme, “Celebrating 15 Years of Delicious Discoveries.” But don’t get the impression that means the fest merely will be a six-week stroll down a culinary memory lane.

Rather, the 15th annual festival Oct. 1-Nov. 14 will combine the familiar with sipping-and-nibbling adventures to places yet unexplored. To Belgium. To South Korea. To charcuterie and cheese. To an event where the main course is a “sweet tooth’s” dream. To signature dining adventures where they’ve never been before. To music concerts by artists who’ve never stepped onto the America Gardens Theatre stage before.

Even before the first pour of the festival, “new” will be the word of the day during the first-ever First Bites Opening Reception on Sept. 30, the eve of the festival opening. There’ll be epicurean samplings from some of the festival’s 27 International Marketplaces, Wine Seminars, Culinary Demonstrations, merchandise locations, celebrities and entertainment – a true sneak peek of the festival during an upscale, reservation-only evening in the Festival Welcome Center.

Culinary Adventures in Signature Dining, showcasing signature restaurants during memorable meals complemented by special wines, features four new venues. The 15-stop series kicks off Oct. 5 with a date at Paradiso 37. Later in the festival, there’ll be new experiences at Kouzzina by Cat Cora, Bongo’s Cuban Café and Fulton’s Crab House.

3D–Disney’s Dessert Discovery, on select Thursdays and Fridays, combines a variety of desserts and samplings of cordials with VIP viewing of “IllumiNations: Reflections of Earth” to provide a sweet finish to a festival day.

Included with Epcot admission are Authentic Taste seminars and Authors Without Borders programs with special book signings at the Festival Center, Eat to the Beat! concerts (including shows in October featuring four newcomers to the lineup), cultural adventures, Marketplace Discovery Passport and all attractions and park entertainment.

What is it? – Freshly baked waffles with berry compote and whipped cream paired with Godiva chocolate iced coffee

Where can you get it? The new Belgium tasting marketplace during the Epcot International Food & Wine Festival at Walt Disney World Resort in Lake Buena Vista, Fla. Throughout the 1.3 mile World Showcase promenade more than two dozen international kiosks showcasing savory samplings.

When can you get it? The annual festival overflows with global cuisine, celebrated chefs and special entertainment Oct. 1-Nov. 14, 2010.

Disney Food Confession – Ger’s Bread and Butter Pudding with Recipe

Disney Food Confession   Gers Bread and Butter Pudding with Recipe

What is it? Ger’s Bread and Butter Pudding served–wait for it–with individual pitchers of creme anglaise and butterscotch.  Sigh.

Where to find itRaglan Road in Downtown Disney.

Why you want it:   Imagine bread pudding, if you will.  It’s good, but ordinary.  But add two delightful little pitchers of butterscotch and creme anglaise goodness and well, you’ve just elevated the frugal use of day-old bread to cult status.    Do they serve actual entrees at Raglan  Road?  Yes they do. Do I care?  No.  I’m here for the pudding.

Raglan Road Irish Pub’s Ger’s Bread and Butter Pudding

Yield: 4 servings.

12 slices medium-sliced white bread
3 ounces salted butter, at room temp
2 ounces raisins
1/2 pint cream
1/2 pint milk
4 egg yolks
3 ounces super-fine sugar
Sauce of choice for serving

1. Butter ovenproof dish. Remove crusts from bread; butter on both sides and cut into quarters. Arrange layers of bread in triangles (overlapping slightly) in bottom of dish, scatter raisins on top. Cover with another layer. You should have some bread pieces leftover to use in Step 4. Press down gently with spatula.
2. To make custard, heat cream and milk in pot until it almost comes to boil. Remove from heat.
3. Whisk egg yolks and sugar in large heatproof bowl set over pan of simmering water until thick and whisk leaves a trail in mixture. Remove from heat and beat in cream mixture. Pour 2/3 of the custard over layered bread. Let stand 30 minutes or until bread has soaked up custard.
4. Heat oven to 350 F. Pour remaining custard over soaked bread and arrange remaining bread slices on top. Press down gently with spatula so that custard comes halfway up bread slices. Bake 30 minutes until custard is just set and top is golden brown. Serve immediately with sauces of choice.
Recipe note: A custard or butterscotch sauce works well.
