A Disney fan favorite moderate resort, Coronado Springs is themed like Spanish-Colonial Mexico.  Here you will find Mayan ruins and themed areas that resemble pueblos and terra cotta villages.

The resort’s sit down restaurant is called Maya Grill and offers both a breakfast buffet and a la carte dinner.  Dinner offers mainly latin spiced wood-grilled selections.

    My family and I went to Maya Grill for dinner, and while most everyone else was content with their food, I had their steak, and it was not the greatest. Tough to cut through, and had too much of a burnt outside for my liking.
