Pineapple Breakfast Bread Recipe

Yield 1 – 9″ x 13″ cake pan

Ingredients
1 3/4 C. Water
1 Egg Yolk
2 T. Shortening
4 1/2 C. High Gluten Flour
1/2 tsp. Salt
1/3 C Sugar
1 T. Instant Yeast

Coconut Mixture
1 C. Crushed pineapple
1 C. Unsweetened coconut
1 C. Sugar
2 T. Cornstarch

Pinapple/Coconut Method
1. Combine pineapple and coconut in bowl.

2. Combine sugar and cornstarch in separate bowl and mix well.

3. Add sugar and cornstarch mixture into pineapple and coconut mixture and mix well.

4. Refrigerate for 1 hour.

Bread Method
1. Combine all ingredients in order of recipe in mixing bowl, and mix with dough hook until
dough picks up on hook and the sides of the mixing bowl is clean.

2. Let dough rise until it doubles in size.

3. Roll out dough onto a floured surface until it is 2 inches thick.

4. Next spread pineapple/coconut mixture over the top of the dough.

5. Fold dough into itself and place in a greased 9″ x 13″ cake pan.

6. Cut dough into pieces with a pizza cutter and spread out cut pieces evenly in cake pan.

7. Let dough rise in warm oven (110 degrees F) – about half way up the pan.

8. Bake at 325 degrees F for 20-25 minutes or until golden brown.

9. Let bread cool, cut and serve.

Where is it? Boma Flavors of Africa – Animal Kingdom Lodge Walt Disney World

What is it? A Rich and Creamy Butternut Squash soup seasoned with Ginger, Nutmeg, Cinnamon, and Coriander.

Why you want it? It’s like eating liquid pumpkin pie..It is so yummy.

Butternut Squash Soup Recipe

Yield: 8 servings

Ingredients:
3 ounces Unsalted Butter
11 ounces Butternut Squash, cut in chunks
To taste Salt and Pepper
8 ounces Water
8 ounces Heavy Cream
8 ounces Milk
1 ounce Sugar, adjust if needed
1 teaspoon Ginger
1 teaspoon Nutmeg
1 teaspoon Cinnamon
1 teaspoon Coriander
1 tablespoon Cornstarch
Water
3 ounces American Cheese

Method of Preparation:
1. In a small pot, melt the butter and pour over the squash. Season squash with salt and pepper and roast in 325 oven for 45 minutes.
2. In a kettle, mix squash with water. Add heavy cream and milk and puree. Add sugar, ginger, nutmeg, cinnamon, and coriander.
3. Make a slurry with the cornstarch and add to the soup.
4. Add the American cheese and continue mixing until smooth.
5. Adjust seasoning.

What is it? French toast, Pancakes topped with Pineapple sauce and Macadamia Nut Butter, eggs, home fried potatoes, ham, bacon, and sausage!

Where can you get it? Kona Cafe at the Polynesian Resort.

Why you want it? For under $12 I think its one of the better breakfasts at Disney world. It is really good and keeps you very full to last you all day!

Disney Food Confessions – Vegetarian Burger

Where to find it: Beaches and Cream at Disney’s Beach Club Resort and Villas

What is it? Grilled vegetable and grain patty topped with lettuce and tomato and served on a multi grain bun.

Why you want it: This isn’t your typical vegetarian burger at Walt Disney World. The buns are made fresh daily at the Yacht and Beach Club Resorts Bakery. The lettuce and tomato are crisp and fresh and you can have it with or without cheese. Add a cherry coke and its the perfect meal!

Disney Food Confessions – Apple Carmel Crunch

Where is it? Seasons Food Court in Epcot’s Land Pavilion

What is it? That is hard to answer. It had a cheesecake type consistency but much lighter and fluffier. The Carmel and Apple flavors were so delicious with a nice crunch on the outside this was one of my favorite treats on our last trip.

Why you want it? Not as heavy as a cheese cake but full of flavor. This little goodie is good anytime of day.
