If you have been to the Food and Wine Festival this year or even just been keeping up on the happenings at the “World” you have surely heard about the delectable Shrimp Tacos that can be found at the Mexico booth. Since I am a lover of all things consumable one of my first purchases at the Festival Shop was the Cookbook (under $15!) and when I got home and felt the withdrawal set in almost instantly I headed out to make a homemade Epcot dinner!
You can find the recipe on YouTube here:
I followed the Cookbook step by step and below you can find my pics and tips, unfortunately the full recipe hasn’t been posted anywhere online so for sizes and measurements you will have to refer to the official cookbook!
Whenever I recreate this recipe again I will probably opt to buy a good brand of chipolte mayo since when I made mine at home it was SO hot I had to add some corn starch to it to tone it down!
The stage set for my shrimp frying! Since I don't deep fry very often I just used a regular pot to avoid pops and burns from the oil!
It took about 3 minutes of frying to get the right color and a pound of shrimp took me about 3 waves of frying to get through!
The most fun step is assembly, a little bit of chipolte mayo, 3 fried shrimp, covered with some salsa verde and shredded cabbage (I couldn't find any so I used Mann's Brocoli Slaw which I love anyway and tasted great)!
The Cookbook is available throughout Epcot now through the end of the festival as well as here at the Disney Store website!
